Strawberry Chia Oatmeal Bar Recipe

Oat bars have become a popular snack in recent years, and with good cause.   

These small but filling snacks can be used as an on-the-go snack, breakfast, or dessert.  

1 tablespoon ground flaxseeds. 3 tablespoons of water.  2 cups frozen strawberries.  2 tablespoons chia seeds.


Zest of one orange ¼ cup + 3 tablespoons maple syrup, divided 1 cup rolled oats. Ingredients: ½ cup almond flour ½ cup oat flour (or quinoa, or brown rice flour) ¼ teaspoon salt 1/4 cup melted coconut oil.

Preheat the oven to 350 F. In a small bowl, combine the ground flax and water, stirring well. Set aside.  

Put the frozen strawberries in a medium pot and cook on medium. Stir the mixture constantly, and after about 5 minutes, begin to crush the strawberries with a potato masher or wooden mallet.  

Once mashed, remove from heat and mix in the chia seeds, orange zest, and 3 tablespoons maple syrup. Stir thoroughly and set aside.  

In a large mixing basin, combine the oats, two types of flour, and salt. Then, combine the remaining maple syrup and coconut oil. Place the mixture on a cutting board and shape it into a log.   

Cut it in half, leaving one half for the topping. Return half to the bowl and add the flax mixture. Combine thoroughly, then spread the mixture into an 8-inch × 8-inch baking dish lined with paper. Bake the crust for ten minutes.  

Now, sprinkle the strawberry chia mixture on top in a thick layer. Top with the remaining oat topping.  

Bake for another 20 minutes, or until the oats are golden brown. Let cool for one hour before slicing and serving.
